- Crack 1 egg in a bowl.
- Add 2 diced spinach leaves,2 teaspoons pitted olives,1 teaspoon tomato paste,1 teaspoon tahini (sesame seeds paste, available at stores selling arabic, turkish, Mediterranean foods),half diced tomato,1 tablespoon fat free cottage cheese cubes.
- Beat the egg and the mixture.
- Add salt, garlic powder, black pepper.
- Brush a non stick pan with olive oil and pour the mixture.
- Cook over low heat for 3-5 minutes.
- Sprinkle lemon juice on top.
